About this recipe:
Enjoy the smoky and savory flavors of Chiles Poblanos with Beans and Chorizo, enhanced by the creamy spice of Juanita’s Queso Blanco Spicy Poblano. This dish features roasted poblano chiles stuffed with a hearty mixture of refried beans and chorizo, topped with cheese and baked to perfection.
Ingredients:
- 1 (15 oz.) can Juanita’s Queso Blanco Spicy Poblano
- 4 poblano chiles, previously roasted and peeled
- 1 cup refried beans
- 7 oz. chorizo, cut into pieces
- 1 teaspoon of salt
- 2-3 tablespoons of oil
Step by step:
- Turn heat on high, apply a small bit of oil, then press and ground the chorizo in the skillet and cook for 5-7 minutes until it is halfway cooked over medium heat. You’ll know it’s done when the chorizo is browned, fully cooked through, and has released its oils.
- In the same pan, mix the fried chorizo well with the refried beans. Set aside some chorizo for garnish.
- Fill the pre-roasted chiles with a layer of Juanita’s Queso Blanco Spicy Poblano Cheese Sauce, then add the beans with chorizo. Drizzle more Juanita’s Queso Blanco Spicy Poblano on the top of the chiles.
- Sprinkle the top with some leftover chorizo.
- Place the filled chiles in a flat pan with a little water, cover with tin foil, poke a couple holes in the tin foil, place on stove. Heat for 10 minutes, or until warm, and serve!
