Ingredients:
- 1 (15 oz.) can Juanita’s Hot & Spicy Nacho Cheese Sauce
- 1 lb ground beef
- 1 cup long grain rice
- 12-15 fried tortilla chips
- 1 can diced tomatoes, drained
- 1 15 oz. can pinto beans, drained
- 1 15 oz. can tomato sauce
- 1 medium onion, diced
- 1 clove minced garlic
- 3 green onions, sliced thin
- 8 oz. can evaporated milk
- 1 tsp salt
- 1 tsp cracked black pepper
- 1 tsp ground cumin
- 1 tsp chili powder
Step by step:
- Cook ground beef with dried seasonings in a large skillet over medium heat for 5 to 7 minutes until browned. Drain excess fat.
- Stir in tomatoes, onions, tomato sauce, water, seasonings, rice, and beans, and cook over medium heat for 5-7 minutes until bubbling. Simmer for 20 minutes, stirring occasionally to check rice tenderness.
- Heat Juanita’s Spicy Cheese Sauce in a small pan. Stir in 1/2 can of evaporated milk a little at a time until the cheese sauce is pourable and has a silky-smooth texture.
- When beef and rice mixture is ready, stir in half of the cheese sauce until blended in. Fold in crushed tortilla chips. Garnish with green onions and serve with a side of tortilla chips and extra queso.
