Made with tender beef, warm corn tortillas, and Juanita’s zesty Nacho Cheese Sauce, these enchiladas are a cheesy, saucy delight. Perfect for any occasion, serve with a side of rice and beans for a satisfying and delicious meal!

• 1 Can Juanita’s Hot & Spicy Nacho Cheese Sauce
• 2 lbs lean Ground Beef
• 16 corn tortillas
• 3 cups Beef Stock or Broth
• 2 ½ Cups Tomato Sauce
• 2 tbsp All Purpose Flour
• 1/4 Cup Chili Powder
• 1 tbsp Onion Powder
• 1 tbsp Ground Cumin
• ½ tsp Mexican Oregano
• 1 clove Garlic, Minced
• Salt and Pepper to taste

STEP 1

Make enchilada sauce: Combine oil, flour, chili powder, cumin, garlic, onion powder, oregano. Add beef stock, tomato sauce, simmer 15 min. Season with salt and pepper.

STEP 2

Brown ground beef with salt and pepper, add 1 cup of enchilada sauce. Mix well.

STEP 3

Warm tortillas and cheese sauce. Spread cheese on tortillas, add beef, roll and place seam side down in 9×13 dish. Repeat.

STEP 4

Top enchiladas with remaining sauce and cheese sauce. Bake at 350°F for 30 min. Serve with rice and beans.
